Ya know what’s really inspiring?

When our clients come to the office with their own home cooked food.
First of all I get to eat it….. YUMMY!!
But most of all, it brings me so much joy to see that the work we do is paying off.
Our clients are cooking and improving their health day to day in their own kitchens.

Our cooking classes teach students how to cook through intuition and creativity. Cami Walker- long time Fruition Health client invented the soup featured below. The amounts are guestimates, so here’s your chance to take the blueprint and make it your own.

  recipe of the month

CAMI'S GIMME GREEN SOUP

½ leek- chopped
2 handfuls cabbage, sliced
1 bunch broccoli- chopped
Couple handfuls of collards- chopped
Veggie broth- enough to cover the veggies (or use ½ water , ½ broth)
Rice milk- estimate
½ cup cooked quinoa (optional)
Olive oil
Salt
Turmeric
Cumin
Ume vinegar

Sauté leek and cabbage in olive oil until soft
Add broccoli and spices and cook 3 minutes
Add broth and rice milk
Heat to boil then reduce to simmer
Add vinegar and collards
Simmer 10 minutes
When done, puree and add quinoa
